National Pumpkin Cheesecake Day

To celebrate National Pumpkin Cheesecake Day I decided to share some of these amazing pumpkin recipe ideas. Anything with pumpkin in it is a great treat for your family in October. And everyone is either planning to or already went to the pumpkin patch to pick out the biggest pumpkins for their Halloween decorations. So, can we embrace the festivities of October even more? Well, yeh with these 3 amazing pumpkin recipes, you’ll be delighted on how good October can get.

Recipe 1: Paula Deen's Pumpkin Cheesecake

This recipe is definitely the longest on this list but also one of the best! This recipe by Paula Deen is one to try before the season is over at least once. Or if you make enough, twice! Food Network deems it at an easy cooking level and takes a total of 5 hours and 15 minutes. But no worries, it only requires you to heat the crust and then you can place it in the fridge for about 4 hours. Here’s what you’ll need for this delicacy.

Ingredients:

Crust:

  • 1 ¾ cups graham cracker crumbs

  • 3 tablespoons light brown sugar

  • ½ teaspoon ground cinnamon

  • 1 stick melted salted butter

    Filling:

  • 3 (8 - ounce) packages cream cheese at room temperature

  • 1 (15 - ounce) can pureed pumpkin

  • 3 full eggs and 1 egg white

  • ¼ cup sour cream

  • 1 ½ cups sugar

  • ½ teaspoon cinnamon

  • â…› fresh ground nutmeg

  • â…› teaspoon ground cloves

  • 2 tablespoon all-purpose flour

  • 1 teaspoon vanilla extract

Directions:

Now it’s time for the fun part! First, preheat your oven to 350 degrees. Next, in a medium-sized bowl, you want to add the graham cracker crumbs (if they didn’t come in crumbs enjoy crunching them up!) sugar and cinnamon. Once it’s all mixed together, add melted butter and flatten them down into a pan and put it aside.

Now, for the filling, you want to whip the cream until it’s nice and smooth. Add the Pumpkin puree, eggs, egg yolk, and sour cream, sugar, and spices. Add flour and vanilla. Beat together until there are no dry spots.

Lastly, pour your batter into your homemade graham crust and place in the oven for 1 hour. Then, place it aside for 15 minutes to cool off and wrap it in plastic before putting it in the fridge for 4 hours.

Once your Pumpkin Cheesecake has cooled off enough it should be tasty and ready to eat! This would make a great dessert for any get together during October! Plus, you’ll be sharing a blessing of deliciousness with everyone’s taste buds.


Recipe 2: Pumpkin Chocolate Chip Muffins

This recipe is here to show you how quick and easy it is to make something so delicious! I mean, most of us are used to our pumpkin spice lattes, but this year we’re mixing it up. And putting a little pumpkin in everything else! This recipe is by Donna, who pays attention to her taste buds and her time. Taking only 30 minutes to make this will make a great breakfast item for the whole family to eat at home or on the go. I would even use it as a replacement for lunch or a snack if I’m hungry!

Ingredients:

¾ cup white sugar

¼ cup of vegetable oil

2 eggs

¾ cup canned pumpkin

¼ cup water

1 ½ cups all-purpose flour

¾ teaspoon baking powder

½ teaspoon baking soda

¼ teaspoon ground cloves

½ teaspoon ground cinnamon

¼ teaspoon salt

½ cup semisweet chocolate chips

Directions:

You can start by preheating your oven to 400 degrees F. Then grease or butter up muffin pan. You can also use liners if you have them handy.

Then, mix the sugar, eggs, oil, water, and pumpkin in one bowl. In a different bowl start mixing the baking flour, baking powder, baking soda, spices, and salt. Once you have those mixed well in separate bowls you can add the wet mixture into the bowl with your spices and salt. Then, add those delicious chocolate chips! P.S. I know they’re good because you know chocolate.

Here we go, the last step in baking up these delicious pumpkin chocolate chip muffins! Simply, pour your mixture into your tray -- careful, don’t fill them up to the top. Aim for about â…” of the way. Place your filled muffin tray into the preheated oven for 20 - 25 minutes and enjoy!
 

Recipe 3: Downeast Maine Pumpkin Bread

Our last recipe on the list, but certainly not the least in terms of great taste! We’re going to share a savory pumpkin bread by Laurie Bennett. This delicious dessert, snack, lunch, or side is a really nifty idea if you’re looking to really get into the Halloween/October spirit!

Ingredients:

1 (15 ounces) can pumpkin puree

4 eggs

1 cup vegetable oil

â…” cup water

3 cups white sugar

3 ½ cups all-purpose flour

2 teaspoons baking soda

1 ½ teaspoons baking soda

1 ½ teaspoons salt

1 teaspoon ground cinnamon

1 teaspoon ground cloves

1 teaspoon ground nutmeg

¼ teaspoon ground ginger

Directions:

This one is shorter than the cheesecake and just a bit longer than the pumpkin muffins. At approximately an hour to prep and cook, you’ll be enjoying this delicious pumpkin bread in no time.

First, preheat the oven to 350 degrees. Then, add grease and flour to your loaf pans. Next, in a large bowl, start mixing the pumpkin puree, oil, eggs, water, and sugar until there are no dry spots. In another bowl, you can add the flour, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.

Once you have both bowls well mixed together you can add the second bowl into the one with the pumpkin. You can blend them together, or stir until they’re nicely married! Pour your batter into your loaf pan and bake for 50 minutes. You can tell when your loaf is done when you stick a toothpick in the center and it comes out clean.
